Wednesday:) What’s Cookin’ Good Lookin’?

My good friend Lynda had surgery a few days ago and is recovering. It must be very frustrating not to be able to move around and take care of yourself. Thank goodness she has wonderful family support and many close friends. A few girlfriends offered to bring by some meals for her on certain days. I’m more of an abstract, unconventional kind of person, so I offered to make a few things that could be popped in the freezer or fridge and used in a pinch.

I figured most people would be bringing dinners, so besides making several containers of pasta, I thought some fruit yogurt parfaits would be good for a fast breakfast or snack. Turns out, Lynda said that was one of her favorites and she was craving fruit. Yay! Perfect!

I started cooking late Monday. Actually it was early Tuesday, around 1 a.m. Before I finished. 

I love to cook, and I never learned to cook small, so this was the perfect opportunity to get carried away. Pasta freezes and reheats well.


For the yogurt parfaits, I used plain Greek yogurt and added a little pure honey. I read the ingredients on the label of the yogurt with honey, and it had pure cane sugar, fructose, and honey and other stuff. I’d rather use just plain old honey. Then, I cut up some grapes and strawberries, layering the ingredients in three tall plastic cups.(Forgot to take a picture of the final product.) 

I dropped of the food yesterday before I went to my St. Gabriel’s Women’s Club meeting. I brought a warm hug, some food made with love, and stayed just for a very short visit. She looks good and in good spirits.

Lynda texted me this morning to thank me for the pasta and parfaits. She even sent me a picture of her enjoying her breakfast. Gee, I hope she doesn’t mind me sharing it with a few hundred of my best closest personal friends on the Internet? 


She is just too cute not to share. Feel better. Love you!

Saturday:) Some More Fun Stuff from Oklahoma

I tried to post this yesterday, but the wi-fi signal gods were not cooperating. Today, I  tried many, many times. Even my texts failed to send, but at 2am, I heard a ping. Yeah! I got up to check, but my phone informed me…message failed. Well, thanks for telling me. I guess, sometime between 4 and 5, a couple of things went through. But, unfortunately, not my post. (At least I don’t think so.)

Michele said perhaps if I stood outside on the magic rock, hold my hands up in the air, and say a special chant to the wi-if spirits, I might find a signal. It didn’t work…but I tried.


“Please, Wi-Fi spirits, allow your magical powers to enter my unworthy digital devices that I might share my adventures with the world. P.S. I’d like to be able to send a text, too.”

My chant didn’t work, so I’m catching up on Saturday’s sensational adventures at Crescent Moon Lodge and the fantastic food prepared by Chef David Bernard, from McKinneyfoodie.com. Be prepared to be jealous. Three marvelous meals with snacks and beverages in between. All homemade and baked on the premises. Several times I exclaimed, “Oh my, we have to eat again?” (FYI-they cater.)



That’s just a sampling of the fabulous food and friendship. Sunday’s post will be the fine art and friendship.

Tuesday:) Tasty Time With Friends

Sunday was a fun day with friends and massive amounts of cookies. My friend, Blynda, has an annual cookie contest and party during the holidays. She and her children all bake their favorite cookie recipe and they invite all their friends for a blind-test tasting contest. 

  
Blynda is an amazing artist, friend, and hostess. Her home was filled to the brim with more than willing tasters. There were hundreds of cookies, maybe even thousands. Who knows? I ate a few hundred myself…well, almost. The best part is chatting with long time friends and meeting new ones.

Food brings people together, but cookies keep them coming back for more.

   
 
This evening’s sunset. I was driving to our McKinney Creative meeting tonight when I saw this sunset. I hopped out of my car to capture the moment.

Wednesday Words of Wisdom:) Happiness is Sharing

I don’t cook fancy or complicated, but I genuinely love to cook and bake. Unfortunately, I rarely get a chance to make my mighty marathon meals like I did when the kids were at home and we were a family. But, the good news is, I have good friends who love my cooking. 

Today, I was in the mood to make some pasta. I can’t just make a little, so I made two pounds of penne pasta and a giant pot of marinara sauce. The kitchen was covered  in cans and spices and splatters. (My secret ingredient for my sauce…a few shakes of cayenne pepper.)

 I shared my pasta with Miss Kathy across the street and Mr. Mike across the park. Neither of them likes to cook, so what better friends to share with. 

   
 

Friday Family, Fun, and Food

A beautiful day in Elgin, sunshine and 70’s. Couldn’t ask for a better day. When I woke up, Mom was making pancakes. I don’t eat breakfast before noon, so I passed. BUT, I suggested that she make a funny face in her pancakes. She doesn’t see faces in her food, so I took the liberty of embellishing her breakfast.

I went for a long leisurely walk, and soaked in the sunshine, birds chirping, racoons roaming. 

It was too nice to stay inside. Mom doesn’t like to venture out that much anymore, but my sister and I coerced her into joining us for lunch at Olive Garden.  She said that she doesn’t like their food, so I told her to just order dessert then. She loves dessert. So, off we went. 
  
Their black tie chocolate mousse cake is fantastic. “Life is short, eat dessert any time.” (Me)

  
I am a very considerate and helpful daughter, so I helped Mom with her lunch. 

   
 

Tuesday: Tip of the Day

Quite a busy day. I went for a long walk at 7:15 am with my new neighbor, Daine, for about an hour, then off to Zumba 8:30-9:30. Stopped for an iced tea with Karen after class, then straight home to work on MORE unpacking. Will it never end? Nope!

I got so wrapped up with my whirlwind organizing, that I totally forgot that I hadn’t eaten in 24 hours. Yikes! I opened the fridge. Oops! No leftovers. Now what?

Thank goodness I learned that tip about freezing avocados. I buy them when they are in season and cheap, then add a little lemon and freeze halves in a little,ziplock.mI always have tortillas, cheese, spinach and plain yogurt in the fridge. Then there’s always a can of black beans in the pantry. All these items last a pretty long time.

Now, to prepare a feast. I warm the tortilla in a dry pan till crispy, add cheese, squish the avocado on top, a couple of spoonfuls of black beans, a handful of spinach, tomato, then a few dollops of yogurt. Oh my! Awesome!

This is one of my all time favorites. Great for vegetarians too. I’m not a vegatarian, but I could be…not really. Once in a while, I need a slice of pepperoni pizza.

Just Another Saturday in McKinney

McKinney Texas is a magical place to live. There are so many things to do, but there aren’t enough hours in the day to scratch the surface, especially on Second Saturday. Shops and restaurants are open late, with musicians performing, and fabulous artists featured at the galleries.

My day started out at Coffee2, a delightful coffee shop on the Square where our writing group meets. Bicyclists and runners always pop in for a quick coffee and a short break.

After a grueling writing critique, (we spend more time gossiping, giggling, and sipping warm brown liquid) we often stop for lunch. Today, Mandy and I tried a different location other than our usual Snug on the Square stop.

Churchill’s is the quaint British Pub where we parked our hungry selves for lunch. Good food and great atmosphere. They have the typical British fare like bangers and mash, but I had a grilled chicken sandwich and fries.

Even though it was a dreary drizzly day, people were walking around, shopping, and dining, scurrying between the drops. I walked over to the McKinney Convention & Visitors Bureau. I was at their ribbon cutting ceremony a couple weeks back, and they called the other day to say I’d won a prize in their drawing. Beth Shumate was there to chat and greet visitors.

After driving home in the drizzle and a few hours of mindless TV watching, my sweet husband asked if I’d like to go out to dinner. Why not? A perfect end to another fun-filled, jammed-packed Saturday.

We decided on Sicily’s on University. The Italian food is wonderful. It’s one of those BYOB family restaurants, where they give you way too much food, the service is excellent, and the owner greets everyone with a warm smile. I always get the eggplant parmesan. Its comes out piping hot with gooey bubbling cheese. I could never make anything at home that could compare. My husband got the shrimp scampi and a doggie bag. The signature warm crusty rolls are perfect for sopping up the sumptuous sauces. OK, now that you are hungry and I am about to explode, I will end here. Hopefully, not exploding before I finish posting this rap-up of my day. Have a good one!
