” When life gives you lemons, make lemonade. But, when life gives you strawberries, dip them in chocolate,”

***************************

I really have never made lemonade with real lemons before, have you? Sounds like a lot of work. I just get a can of Minute Maid frozen concentrate. Oh, and the limeade is great for making margaritas.

I was at Sprouts on Sunday, and strawberries were on sale $1.88 for the big quart box. I had three events that I needed to take something for on Monday, so I decided to make a whole mess (3 boxes) of chocolate dipped strawberries. They’re actually pretty easy to make and you can’t beat the price. Kroger had the big fancy ones featured around Mother’s Day for something like $2 a piece. Yikes! So, I made my own.

The first thing you do is wash and dry a zillion strawberries.

Then, you melt 3 bags of semi-sweet chocolate chips in the microwave with about 2 tablespoons of canola oil. I zapped it 1 minute, stirred, then zapped another 30 seconds at a time till smooth. Then, hand dip each one.

Then, you place them on waxed paper and put in the fridge for 5 or 10 minutes. I put one pan in while preparing the next. (I only had room for one at a time.) You don’t want to leave them in there too long, just till they set. I made them right before leaving so they would be fresh.

Wow! I just counted. 103, less the ones I “taste tested.”

My first stop, as always, is Fire Station 9, (large ones on the left) then to the country dance at the senior center. (The right) A third batch went to McKinney Creative Community at 5:30, and there was some left over for Station 2 on the way home. Oh, and about a dozen for Miss Kathy across the street to take to work. I made sure all were gone so I wouldn’t be forced to eat more than the two I taste tested in the beginning.

Life is better when it’s dipped in chocolate.
